Shrimp and garlic are a legendary pairing. As a 30-year hospitality veteran, I’ve seen this dish disappear from plates faster than almost anything else on the menu. It’s elegant, nutrient-dense, and proves that Healthy & Affordable is the ultimate luxury.

Ingredients

  • 12 White Shrimp (Size 31-40, tails on)
  • 1 Tbsp Fresh Garlic (3 cloves, minced)
  • 1/4 Tsp Lemon Pepper
  • 1 Tbsp Unsalted Butter
  • 1 Tbsp Extra Virgin Olive Oil (EVOO)

Professional Preparation

  1. Heat the Base: Set a large skillet over medium heat. Add butter and Extra Virgin Olive Oil (EVOO). The oil prevents the butter from burning.
  2. Bloom the Aromatics: Add minced garlic. Sauté for 60 seconds until fragrant. Avoid browning to prevent bitterness.
  3. Sear the Shrimp: Increase heat slightly. Add shrimp in a single layer and season with lemon pepper.
  4. The Perfect Finish: Sauté for 2 minutes per side until pink and opaque.

💡 Front of the House (FOH) Pro-Tip:

In the industry, we watch the shape of the shrimp to judge doneness. A perfect shrimp forms a "C" shape. If it curls tightly into an "O", it's overcooked and rubbery. Aim for the "C" for that restaurant-quality snap!
